Dean Simon has been involved in food-related businesses for over 35 years. Starting in the restaurant business at age 15 Simon has been involved in a variety of businesses all with a focus on innovative food product offerings.​In 1984 Simon opened Allegro Catering – Partnering with his Belgian born friend, Philippe Caupain, Allegro featured exhibition style cooking, multiethnic cuisine utilizing fresh ingredients prepared tableside. Simon would source his produce from local farmers’ markets.​In 1988 he started Chefs Produce Team. Chefs Produce Team was the specialty produce supplier to some of America's top chefs including Wolfgang Puck and had operations in Los Angeles, San Francisco, and Las Vegas Where he met Brant Holland.​In 2006 Simon and Philippe Caupain formed Brux Brothers producer of Authentic Brussels and Liege Waffles, Pancakes, Crepes and Gluten Free mixes.​In 2010 Simon founded Bruxie Gourmet Waffle Sandwiches, an overnight sensation was ranked #2 in the Nation in 2011 on Yelp. ​Currently Simon is the founder and CEO of PlatformZ, LLC and BruxMix, leading developer of culinary Waffle, Pancake and Crepe mixes.​
