Leading the Stewarding department in assisting and supporting the many and varied F&B offerings and events across the mixed use Park. Primary clients being the NFL Houston Texans and the Houston Livestock Show & Rodeo. Additionally, we supported many events hosted on property in coordination with Seasonal trade shows, sporting events, conventions, concerts and County sponsored events. Many of these events occurred within the Stadium and the Event Center and required multiple teams working in tandem to successfully execute.

Led the Stewarding department in supporting the Food & Beverage operations by keeping kitchens, coolers and food storage areas cleaned. The department ran 24 hours a day with with the assistance of 3 Lead Stewards. We were also responsible for the nightly deep cleaning tasks using Heavy Duty Stewards to accomplish the regularly scheduled cleanings of of the commercial kitchen equipment. Coordinated with the over night outlet staff to thoroughly clean the kitchen and prep areas nightly. Maintained all kitchen pans, utensils as well as outlets china, glass, silverware and kitchens cooking utensils.We operated a buffet Friday-Sunday, our Steakhouse was open nightly, our quick service outlet operated 24 hours a day. We frequently hosted Casino marketing events. Also responsible for ordering and maintaining the cleaning supplies and chemicals inventory. We operated a small rack loaded dish machine for the steakhouse while the remaining dishes were cleaned in the pot sink or through our two flight machines. Contacted applicants and set up interviews for candidates regularly. Scheduled and coordinated the monthly pest control services and performed follow ups based on their notes. Also coordinated the regular cleanings of the kitchen hood vent systems throughout the multiple kitchen areas. Helped to reduce operating expenses by reducing the number of flatware patterns to 2 distinct patterns; one for the steakhouse and the other to be cross utilized between the other 2 outlets and Banquet department. Identified the leased and owned dish machines. we were able to move a few machines around to the necessary areas and returned4 vastly underused leased machines and recaptured several thousand dollars annually on equipment leases. Put a series of checklists, department policies training guides and visual aids together to establish consistency across the shifts.

Support and maintain all areas of Premium Services at NRG Park; Stadium areas including Hot & Cold Production kitchens, Texans Cafe, Lower Suites, Upper Suites, Halo Suites, Club Level concession stands, VIP Suites and 7th floor Clubs in the Stadium. Production kitchen and catering services in NRG Center and NRG Arena. Kitchen sanitation, cleanliness and transportation of prepared product campus wide. Organization and inventory of all pertinent equipment campus wide. Providing support to other local Aramark contracts at GRB Convention Center, University Of Houston Athletics and Minutemaid Park.
