In 2015, the partnership of Restauranteur BIll Chait and award-winning Chef Walter Manske, took their successful restaurant concept, Petty Cash Taqueria, and reproduce the concept in a previously occupied restaurant space in the Downtown Los Angeles Arts District area. I was brought on due to having project management & leadership experience in all areas of restaurant openings. In partnership with the General Manager of the original location, We coordinated and lead general contractors, electricians, technology experts, public relations team, and all hiring and staffing of the downtown location. We coordinated opening training, managerial procedures, and financial procedures, as well as established vendor and third party contractor relationships. As Assistant General Manager after the opening project of Downtown Los Angeles location, I aided the Director of Operations in all continued operations including Human Resource, Financial, and Training Operations as well as any extraneous ongoing day-to-day operations.

Plan Check Kitchen + Bar is a chain of upscale, gourmet kitchen and craft cocktail bar specializing in premium and unique burgers, craft cocktails, and a seasonally rotating draft beer selection. Plan Check Kitchen + Bar was established in 2012 with the partnership of Restauranteur Terry Heller and former Umami Burger Brand Chef Ernesto Uchimura.I was initially brought on as an Assistant General Manager to Senior General Manager Christopher Brian at the Fairfax / West Hollywood location a few weeks after their initial opening. My previous experience in project management as well as restaurant operations served me well to assist Christopher Brian in stabilizing and preparing a General Manager and Management team to take over the Fairfax / West Hollywood location. We focused our expertise towards opening the third location in Downtown Los Angeles. My responsibilities during the opening project included opening training program design, overseeing and finalizing of construction, the initial staffing of hourly, chef and managerial staff members, All bar systems and training, and assisting the director of operations and the beverage director in opening procedures. After the opening project was completed I was named General Manager of the downtown location where I lead multiple management and chef team members in achieving financial, operational and quality goals. We met and sometimes excelled in budget goals as well as guest retention due to proactive service, quality, and management strategies including continued training, staff morale outings, and organizational development.

Coco Laurent is a large 7,000 square foot french bistro located in the center of Downtown Los Angeles' financial district. I joined the team at Coco Laurent as a Consulting General Manager and Special Projects Manager during its 6th month of operation as part of a team of experienced Culinary, Business, and Restaurant Operations professionals. The restaurant needed assistance after its initial opening, needing a complete revamp of its menu, marketing, and operations with a focus on business growth. As a Consulting General Manager I wore many hats including Training Coordinator, Floor Manager, Human Resources Coordinator, Budget Officer, Floor Sommelier, Financial Advisor, and Payroll Administrator.A selection of the projects I successfully completed as a Special Projects Manager included a California Department of Health standards program achieving a constant "A" grade, a fully comprehensive Front of House training program for all job codes as well as developing and executing a new payroll system supported by ADP, a system of financial tracking and metrics supported by Avero Slingshot, and a day-to-day operational structure that directly increased the bottom line revenue of the restaurant. Further projects included Point-of-Sale system installation and hourly employee training as well as on-going repair and maintenance pertaining to all technology systems.

I started my time with FRC or Fox Restaurant Concepts as a server at True Food kitchen and quickly grew with the company to FOH trainer at many of their concepts around the Phoenix and Scottsdale area. shortly there after I became a Restaurant Manager for the company and continued to grow with this fast-paced and progressive restaurant group. the Fox Restaurant's I had the honor of being a part of included Culinary Dropout Gastropub, Zinburger Wine & Burger Bar, The Arrogant Butcher, Modern Steak, and True Food Kitchen.
