As a Sous Chef, working together with Executive Chef William Pfeiffer and the Amazing Food and Beverage Team, IBM GLC has become the first unit Nationwide to receive the "Center For Excellence" recognition. the first unit to create an Apiiary that, after a year, is producing its honey to use in the kitchen and offer to our customers. Born and raised in Mexico within the culinary tradition of my ancestors, I moved to New York City where I graduated from The International Culinary Center developing my career at renowned restaurants like The Modern Restaurant (MoMa of NYC), Blue Hill, and Stone Barns in Westchester NY, La Fonda del Sol in NYC and Citibank Sanford Weill Center for Executive Development. This gave me the perfect experience to bring fresh ideas to the Kitchen, improving my attention to detail, my care in the execution, my knife skills, and my product knowledge.As a Private Chef at Maison Prive, under the direction of Chefs-Owners Jennifer Vellano & James Vellano (former Chef de Partie at Per Se, NYC). This experience allowed me to see food from another perspective. At Maison Prive, every product is carefully selected to ensure a healthy and refined dining experience that promotes local farmers, sustainable harvest practices, and organically grown seasonal fruits and vegetables. As a Sous Chef at Cucina Ciano in NYC. I had the opportunity to experience and immerse myself in every aspect of the Kitchen and its management. I created and led a team that met the Restaurant's needs by hiring and training the right candidates and working closely with providers to ensure that the restaurant always has everything it needed to work with.
