Tusk is one of the restaurants in the Submarine Hospitality Group. They are an integrated hospitality company that provides elevated experiences of dining and food culture. Working with local, seasonal products, they are creating a hospitality industry that promotes flavor, beauty, and virtue through every stage of the food system. While with Tusk I was responsible for these things: - Responsible for implementing the overall bar program, which included overseeing the education and training of the bar staff on knowledge of our diverse wine, beer, and cocktails. - Oversaw quality control of all bar production and service, which also included ordering all product, compiling the end of the month inventory, processing invoices, and ensuring all product related pricing goals were met. - Implemented a large POS change to Bevager - which included linking all recipes, order inventory systems, and education and rollout of the application.

Paley’s Place is owned by James Beard award-winning chef Vitaly and his wife Kimberly Paley. The restaurant offers limited seats focused on French Bistro style cuisine with a large library of wine and classic cocktails. - Shared responsibly for all inventory, cocktail and liquor pricing, house cocktail recipes, and seasonal menu changes.

Eat Street Social is a high volume craft cocktail bar, offering an experience that focuses on the guest, classic cocktails, and only provides the most natural ingredients. There, we developed over 50 house made products such as tonics, liqueurs, syrups, tinctures, and other ingredients. At Eat Street Social, the menu’s changed seasonally, and bartenders were asked to bring new ideas to each menu. Eat Street Social was recognized as the Best Cocktail Program for 2013 and 2014 as declared by the Minneapolis Star Tribune. - Part of a fifteen person team that provided cocktails, wine, and local craft beers. - Developed and designed new recipes for the cocktail list that changed seasonally with new ingredients and home made products. - Helped train in all new bartenders and bar backs on the Eat Street Social cocktail program, ingredients, and overall spirit knowledge and proper guest interactions.

The Den is a celebration of the ritual of great cocktails. The speak-easy styled bar has been devised for every combination of nightcap and late-night rendezvous. They have an encyclopedic wine list, host some of the city’s top bartenders, and are known for quality cocktails, as it’s located in the iconic Crown Casino. - Part of a five person team that provided cocktails, craft beers, an extensive wine list and very rare and unique top shelf spirits to locals, celebrities, and travelers. - Developed and designed new recipes for the cocktail list in The Den and The Atlantic Restaurant upstairs.- Helped mentor, motivate and educate internal bartenders through goal setting exercises, evaluation and consistent feedback, improving overall production while fostering development.

Indoor Boat Storage provides boat storage and maintenance services to boat owners on Lake Minnetonka and surrounding lakes. - My work included managing maintenance crews of 5 and 10 workers for spring and summer cleaning. In particular, the work involved cleaning 470 boats within a 7-week period.
