Manage lab and perform all tests and bench trials on fruit, must, and wine. Maintain lab equipment and records. Plan annual calendar for all wine aging and movements. Develop plans and make recommendations to VP of Winemaking for all must/wine adjustments. Write work orders for (and oversee) all sampling, adds, fermentations, topping, blending, racking, and filtering. Run crossflow filter; assist with fruit processing and cellar work as needed.
