This establishment, which is only open from December to April every year, caters to elite guests who seek high quality luxury service.I was posted in the Cost Control department for a period of two months where I worked together with the manager to minimise overall hotel expenditure. For the final two months I was placed in the bar and learnt how to make a variety of drinks and cocktails. I had the opportunity to provide guests with an exclusive range of alcoholic beverages, some of which were limited editions.

The Four Seasons Terre Blanche which is now Terre Blanche Hotel Spa Golf Resort is a five star, “Leading Hotel of the World” and also part of the “Leading Spas.”My internship at this resort was in the Guest Services department where I handled all valet facilities, guest arrivals and departures. I worked closely with the hotel Concierge and came in contact with several guest celebrities.My main responsibility at this establishment was to be on night shift in Guest Services, which involved managing the department singlehandedly whilst attending to all guest needs.

Nairobi

The Tribe Hotel is a luxury hotel located in the vicinity of the United Nations Office in Nairobi. I undertook an F&B Cross-Training Internship at the Tribe. Initially, I was in the kitchen and afterwards in the Jiko restaurant, which specializes in Contemporary International Cuisine. During this attachment I interacted with several international guests and got to learn more about the expectations of conference guests.

The Nairobi Serena is a five star luxury city hotel and a member of the “Leading Hotels of the World”.The position held at the Nairobi Serena was Cross-Training Internship. This was designed for me to develop an understanding of the most important service departments in the hospitality industry. I was stationed in the laundry department for a couple of days assisting the staff as well as learning what type of laundry machinery is necessary in a city hotel. Thereafter, I was posted in the main kitchen under the Executive Chef and given the responsibility of receiving the orders to prepare the dishes and garnish them.My next assignment was in Room Service where I undertook the responsibility of serving guests in their rooms and suites. Lastly, I was placed in Café Maghreb, which specialized, in buffet lunches for business guests and a “seafood special” on Friday nights.
